Chocolate Peanut Butter Cookies

I’m so proud of me for getting the recipe and blog post out! I’m clapping for my damn self as my mentor would say because I was (am?) tired this week.

But let’s jump right into the recipe, because do you all really want to hear about all the random little tidbits of my week? I mean, if you do, I am more than happy to oblige you the next time I have a recipe to share. Okay wait, I have a teeny tiny story. Originally I was making bread pudding to share, but I realized I do not like bread pudding- I just don’t understand it. And I made the bread pudding, it wasn’t even bad. But soft soggy french toast flavored bread wasn’t cutting it. I made it and then got rid of it. I will have to revisit that another time. So I made drop cookies. More my zone. Wait…this just gave me an idea. I should write about cooking a whole bunch of obscure or less known desserts like chess pie…I digress and I’m putting that idea in my mental parking lot

Drop cookies are my fav. They are fast and simple to make, minimal ingredients and you can usually substitute some of the ingredients easily to make it your own. I love cookies more than any kind of pudding anyway. These cookies- chocolatey with some peanut butter, soft and chewy. I’m here for that. I am here for the delicious simplicity of these cookies. Easy enough to make on a weeknight and delicious enough to share with a friend ( I was gonna say take to a party, but I’m thinking most of us aren’t partying that hard yet).

Chocolate Peanut Butter Cookies

Cook Time : 10-12 minutes

Yield:12 cookies

1 stick unsalted butter, room temperature

1/2 cup brown sugar

1/2 cup granulated sugar

1 egg

1 tsp vanilla

1/2 tsp salt

1/2 tsp baking soda

1 cup flour

1/4 cup cocoa powder

1 tbsp milk

1 cup peanut butter chips

Instructions

  1. Preheat oven to 350 F. Line a cookie sheet with parchment paper or a silicone mat.

  2. Mix the butter and sugar until well combined.

  3. Add the egg and vanilla and mix into the butter sugar mixture until the egg is combined.

  4. Add the salt, baking soda, flour and cocoa powder. Mix well. Mixture will be thick. Add the milk and mix until the milk is combined and dough is smooth and not as thick.

  5. Add the peanut butter chips (or whatever mix ins you would like) and fold in.

  6. Using a cookie scoop, scoop cookies onto your prepared pan. Put into the oven and bake for about 8-10 minutes or until the edges of the cookie are firm.

  7. Allow to cool on the pan for 3 to 5 minutes. Transfer to a wire rack to cool completely.
